We don't make the bread, the cheese or the beer ourselves. People who are better at it do. Here is who they are, and why we ended up with them.
Bageriet BRØD
Bakery, Vesterbro
Our neighbours. The sourdough for our bread & oil and the grilled sandwich comes from them, baked the same day. Having a proper bakery on the street is why we do not need to bake ourselves, and we pick it up on foot.
Gastronomer
Cheese and charcuterie
The cheese and charcuterie on our plates come from them. They import directly from producers in France and Italy, so we can serve a Comté aged 16 months and a schiacciata piccante from Piemonte without three middlemen.
Viniversa
Wine importer
An importer specialising in France, Germany, Spain and Italy, with a declared weakness for rare grape varieties. They are why the list has Vidiano from Crete, Cococciola from Abruzzo and Ruchè from Piedmont on it rather than another Chardonnay.
Plop!
Wine importer, Svendborg
A small independent importer from Svendborg bringing big wines from small producers in cool climates. They are the ones who bring Hannes Bergdoll to Denmark; his Chardonnay Muschelkalk and Spätburgunder Kalkstein are both on our list.
Herslev Bryghus
Organic farm brewery, Roskilde
An organic farm brewery by Roskilde Fjord that grows its own grain. Our draft beer, sodas and the alcohol-free Altid Frisk all come from them. We are a wine bar, but we are not going to serve whatever beer to the people who do not drink wine.
Vintremøller
Distillery, Lejre
Testament gin from Vintremøller is what goes in our gin & tonic. A Danish distillery in Lejre: local, without us needing to make a thing of it.
